After Sunday's success, I decided to continue it on into Monday. I thought I'd finally give Chicken Parmesan a shot, as it has always seemed challenging to me. It's a favorite of Ryne's, so I was really worried about screwing it up, especially since I was making it at his house on Valentine's Day (read: no chance of us making it to a restaurant if I burned it). It turns out, other than me not being able to read (forgot to pound out the chicken to thin it down), I, too, can make this dish! Victory! It wasn't a masterpiece, but it definitely turned out to be a delicious dish (we each cleared our plates). I didn't have any wine to add to the sauce, so that + doing the meat correctly will hopefully result in an even tastier dish next time. Oh yes, there will be a next time! I need to take pictures, and it involves me making my own sauce ... pretty awesome. If you're interested in the recipe, here it is. The photo above was taken with my sweetie pie's iPhone.
